Stove Top Popcorn

An all-time favorite family recipe is Duncan's Stove Top Popcorn.  No movie is complete without it.  We've experimented with oils, and Coconut Oil makes crunchier, crispier kernels.  Duncan's secret....add salt to the oil while it is heating.

STOVE TOP POPCORN

You will need:

3 Tablespoons coconut oil
1/3 cup popcorn kernels
salt
melted butter, to taste

1. Pour coconut oil and salt in a large thick-bottomed, stainless steel pot with a lid.  Heat the oil and salt on high heat for about 30 seconds.
2 Add the kernels to the oil and cover the pan with a lid.
3 Wait until the popcorn begins to pop, then gently shake the pan by moving it back and forth over the burner until all the popping stops. Try to keep the lid slightly ajar to let the steam from the popcorn release (the popcorn will be drier and crisper). Once the popping slows to several seconds between pops, remove the pan from the heat, remove the lid, and dump the popcorn immediately into a wide bowl.
4 Add melted butter.
